Lactic acid is an important intermediate product in the metabolism of animals and plants and in microorganisms. The salts of lactic acids are termed lactates (e.g. ammonium lactate, calcium lactate). D-(−) lactic acid is also referred to as left-rotating lactic acid and L-(+) lactic acid as right-rotating lactic acid. Racemates are mixtures of L- and D- lactic acid. |
